is an exceptional culinary talent and for many years has not only been one of the absolute spearheads of culinary art in Germany, but is also considered a pioneer of modern vegetable cuisine. His nature-loving, colorful and fresh creations are based on the seasons and are an absolute treat for the senses. His cuisine stands for sustainable, innovative and modern dishes with a strong focus on vegetables and creates a symbiosis of regional and cosmopolitan cuisine.

In addition to his work in the kitchen, Nils Henkel is also a successful author. In 2010, his first cookbook Pure Nature was published by Fackelträger Verlag and was awarded a silver medal by GAD. In 2021, his second cookbook Flora is published with his vegetarian dishes and is honored with a gold medal from the Gastronomische Akademie at the Frankfurt Book Fair in 2022. In 2023, the Flora book is again awarded a gold medal by the Swiss Gourmet Book Award. In September 2023, Henkel's new Fauna book is published with the most important recipes from his fish and meat cuisine

Under the umbrella term and his menus of the same name 'Flora', the top chef not only combines ancient vegetables and wild herbs from the region to create a special vegetarian experience where even passionate meat lovers miss nothing, but also impresses with the best products from the 'fauna' of land and water. The refined creations resemble small works of art and, in addition to the unique, razor-sharp style of the top chef, have in common a strong sense of sustainability and a seasonal focus, with the intrinsic flavor of the first-class products always coming first.

Nils Henkel is also available as a freelancer. He advises catering businesses and hotels, designs restaurant concepts, gives cooking courses, and develops recipes and product lines such as his own spice series in collaboration with Gewürzmühle Rosenheim.

Since spring 2023, Nils Henkel has also been responsible for the kitchen concept of Tipken's by Nils Henkel, the casual fine dining restaurant at Severin*s Resort & Spa in Keitum on the island of Sylt. There, René Verse, a longtime collaborator, is at the helm, working with the kitchen team to elegantly implement a Nordic variant of Henkel's Flora & Fauna cuisine.
